Green almonds grow as tiny budlets that appear on almond trees right after the bloom drops, typically in early winter (February to March in California, and a week or two earlier in the Mediterranean). The bloom itself appears on the tree in early winter. Essentially, they are newborn almonds that are harvested before the shell hardens.
