Sifting uses a screen, such as a fine-mesh sieve, to separate the bran and germ from the flour.
- The bran particles are larger than the flour particles, so they remain on top of the screen.
- The finer flour passes through the screen.
This leaves you with flour that has a finer consistency because it primarily contains the starchy endosperm.
