Icing a fruit cake with fondant creates a smooth, professional finish. Here's how to do it:

Steps to Fondant-Ice Your Fruit Cake

Before you begin, ensure your fruit cake is covered in a layer of marzipan. This provides a smooth, even surface for the fondant to adhere to.

  1. Prepare Your Surface and Fondant:

    • Lightly dust a very clean work surface with icing sugar or cornstarch. This prevents the fondant from sticking.
    • Knead the fondant icing until it is pliable and smooth. This makes it easier to roll out.
  2. Roll Out the Fondant:

    • Roll the fondant icing into a circle. The diameter should be at least twice the diameter of your cake. This ensures you have enough to cover the entire cake. Use a rolling pin and consistent pressure to achieve an even thickness. Aim for about 1/8 to 1/4 inch thickness.
  3. Lift and Drape the Fondant:

    • Carefully lift the rolled fondant icing using the rolling pin or by gently folding it over your hands.
    • Drape the fondant over the marzipan-covered fruit cake, allowing it to gently fold into the shape of the cake. Work quickly but carefully to avoid tearing the fondant.
  4. Smooth the Fondant:

    • Gently press and smooth the fondant icing on the top and sides of the cake. Start from the center of the top and work outwards and downwards.
    • Use a fondant smoother (a plastic tool) to eliminate air bubbles and wrinkles. This creates a perfectly smooth surface. If you don't have a smoother, you can use the palm of your hand, but be very gentle.
  5. Trim Excess Fondant:

    • Once the fondant is smoothly adhered to the cake, trim the excess fondant around the base of the cake using a sharp knife or pizza cutter.
    • Neaten the edges for a clean, professional look.
  6. Finishing Touches (Optional):

    • Allow the fondant to set slightly before adding any decorations.
    • You can decorate the fondant with edible glitter, sugarpaste flowers, or other embellishments.
    • Attach decorations using edible glue or a small amount of water.
