How to Make Grass on a Cake with Buttercream?

Published in Cake Decorating 3 mins read

Making buttercream grass for a cake involves using a grass piping tip and coloring your buttercream green. You can stiffen the buttercream if needed by chilling it or adding a tiny bit of icing sugar, though this can alter the taste.

Here's a breakdown:

  1. Prepare Your Buttercream:

    • Make your favorite buttercream recipe. American buttercream, Swiss meringue buttercream, or Italian meringue buttercream all work.
    • Color the buttercream green using gel food coloring. Gel colors are preferred as they are more concentrated and won't affect the consistency of the buttercream as much as liquid food coloring. Add the coloring gradually until you achieve your desired shade of green.
  2. Stiffen the Buttercream (If Needed):

    • If the buttercream is too soft, it won't hold its shape when piped. You can stiffen it in a few ways:
      • Refrigerate: Place the buttercream in the refrigerator for 15-30 minutes. Check the consistency periodically.
      • Add Icing Sugar (Sparingly): If chilling isn't enough, add a very small amount of powdered sugar (icing sugar) at a time, mixing well after each addition, until the buttercream reaches a stiffer consistency. Be aware that adding too much icing sugar will make the buttercream overly sweet and can change the texture.
  3. Prepare Your Piping Bag and Tip:

    • Attach a grass piping tip to a piping bag. These tips have multiple small holes that create the textured grass effect. Common grass tips are Wilton #233, Ateco #133, or similar.
    • Fill the piping bag with the prepared green buttercream. Don't overfill the bag.
  4. Pipe the Grass:

    • Hold the piping bag vertically, with the tip slightly above the surface of the cake.
    • Squeeze the piping bag gently and pull up slightly, releasing the pressure as you pull away to create individual blades of grass. You can vary the pressure and height to create different lengths and textures of grass.
    • Repeat this process, overlapping the grass to create a dense, realistic grass effect. Work in small sections and rotate the cake as needed.
  5. Finishing Touches:

    • Once you have piped all of the grass, you can add other details, such as flowers, animals, or other decorations to complete the scene.

By following these steps, you can easily create a realistic and appealing buttercream grass decoration for your cake.
