Using soap on cast iron involves a few key steps for cleaning after cooking. Contrary to old myths, a small amount of mild dish soap is acceptable for cleaning seasoned cast iron cookware, as long as you follow proper drying and re-seasoning practices. The goal is to clean off food debris without stripping the protective seasoning layer.

Here's how to use soap to clean your cast iron pan, based on standard practice:

Steps for Cleaning Cast Iron with Soap

Proper cleaning ensures the longevity and performance of your cast iron pan. Follow these steps carefully:

  1. Remove Debris: After your cast iron pan has mostly cooled down from cooking, use a pan scraper or a stiff brush (not steel wool, which can damage seasoning) to scrape away any stuck-on food particles or debris.
  2. Apply Soap: Pour a small amount of mild dish soap directly into the pan. You don't need much – just a little goes a long way. Use a brush or sponge (avoiding abrasive scrubbers on the cooking surface unless necessary for tough spots) to gently clean the pan with the soap and warm water.
  3. Rinse Thoroughly: Rinse the pan under warm water to remove all soap residue and loosened food bits. Soap left behind can leave a soapy taste and potentially affect the seasoning.
  4. Promptly Dry: This is a critical step. Immediately after rinsing, promptly dry the pan completely. You can use a paper towel or a lint-free tea towel to wipe away all moisture. Leaving water on cast iron can lead to rust.
  5. Heat Dry & Re-season: To ensure it's thoroughly dry and to maintain the seasoning, put the pan back on the stove over medium heat for a few minutes. This evaporates any remaining moisture. Once the pan is dry and warm, remove it from the heat and apply a very thin layer of cooking oil (like vegetable or flaxseed oil) to the entire surface, inside and out, wiping off any excess. This helps maintain the protective seasoning.
