Here's a step-by-step guide on how to achieve that perfectly textured milk:

  1. Position the Steam Wand: Place the steam wand near the surface of the milk in the pitcher, typically in the upper right-hand corner.
  2. Tilt the Jug: Angle the jug slightly to the right. This helps create the circular motion necessary for spinning.
  3. Turn on the Steam: Open the steam valve fully to achieve maximum pressure.
  4. Create the Vortex: The milk should begin to spin clockwise, forming a vortex. You're looking for a whirlpool effect. Keep the tip of the steam wand near the surface, introducing air to create microfoam.
  5. Lower the Pitcher (if needed): As the milk volume increases, you may need to lower the pitcher slightly to maintain the steam wand tip at the surface and continue the spinning action.
  6. Submerge the Wand: Once you've achieved the desired amount of foam (about 1/3 to 1/2 increase in volume), submerge the steam wand tip deeper into the milk to homogenize the texture and heat the milk evenly.
  7. Monitor Temperature: Heat the milk to around 140-160°F (60-70°C).
  8. Turn off the Steam and Clean the Wand: Close the steam valve and immediately wipe the steam wand with a damp cloth. Purge the wand by briefly opening the steam valve again to remove any remaining milk.
  9. Swirl and Tap: Gently swirl the milk in the pitcher and tap it on the counter to release any large bubbles before pouring into your coffee.
