Beans, carrots, and broccoli are cooked vegetables that freeze well. Some other cooked vegetables that freeze well include mushrooms, spinach, and rhubarb (yes, botanically it's often classified as a vegetable!). It's generally best to puree, sauté, or stew vegetables with high water content before freezing.
