How to Handle Chili Peppers?

Published in Handling Food 2 mins read

Handling chili peppers requires a few simple precautions to avoid unpleasant sensations, primarily caused by capsaicin.

When handling chili peppers, the most important step is to wear gloves. This is crucial because the capsaicin, the compound responsible for the heat, can remain on your skin even after washing with soap and water. Transferring this residual capsaicin to sensitive areas like your eyes or mouth is not a pleasant experience.

Beyond wearing gloves, here are some practical tips for safely preparing and handling chili peppers:

  • Wash the Peppers: Rinse the peppers under cool running water to remove any surface dirt or debris.
  • Use a Sharp Knife and Cutting Board: A sharp knife makes cutting easier and safer. Dedicate a cutting board specifically for spicy ingredients if possible, or wash it thoroughly afterward.
  • Consider the Heat Level: Different peppers have varying levels of heat (measured in Scoville Heat Units - SHU). Be aware of the general heat level of the pepper you are handling.
  • Remove Seeds and Membranes: Most of the capsaicin is concentrated in the seeds and the white inner membranes. Removing these can significantly reduce the heat of the pepper. This is best done while wearing gloves.
  • Avoid Touching Your Face: Even with gloves on, develop the habit of not touching your eyes, nose, or mouth while handling peppers, and until your hands are thoroughly cleaned after removing the gloves.
  • Clean Up Thoroughly: Wash all utensils, cutting boards, and surfaces that came into contact with the peppers using soap and water. Dispose of the gloves properly.

By following these steps, especially wearing gloves as recommended, you can safely handle chili peppers and enjoy their flavor and heat in your cooking without discomfort.
