How to Dry Rosemary?

Published in Herb Drying 3 mins read

You can dry rosemary using several methods, including air drying, using a dehydrator, an oven, or even a sunny windowsill.

Air Drying

Air drying is a simple method, requiring only time and a dry environment.

  1. Harvest Rosemary: Cut rosemary stems in the morning after the dew has dried.
  2. Bundle Stems: Gather several stems together and tie them at the base with twine.
  3. Hang Upside Down: Hang the bundles upside down in a dry, dark, well-ventilated place. A closet, pantry, or shed works well.
  4. Wait: Allow the rosemary to dry for 2-4 weeks. The leaves should be brittle and easily fall off the stems.
  5. Store: Once dry, remove the leaves from the stems and store them in an airtight container in a cool, dark place.

Using a Dehydrator

A food dehydrator offers a faster and more controlled drying process.

  1. Prepare Rosemary: Wash and thoroughly dry the rosemary sprigs.
  2. Arrange on Trays: Place the sprigs in a single layer on the dehydrator trays, ensuring they don't overlap.
  3. Dehydrate: Set the dehydrator to a low temperature (around 95-100°F or 35-38°C) and dry for 2-4 hours, or until the leaves are brittle. Check periodically.
  4. Store: Once cooled, remove the leaves from the stems and store in an airtight container.

Oven Drying

If you don't have a dehydrator, you can use your oven.

  1. Preheat Oven: Set your oven to the lowest possible temperature (ideally below 170°F or 77°C). If your oven doesn't go that low, prop the door open slightly to allow moisture to escape.
  2. Prepare Rosemary: Wash and thoroughly dry the rosemary sprigs.
  3. Arrange on Baking Sheet: Place the rosemary sprigs in a single layer on a baking sheet lined with parchment paper.
  4. Dry: Dry for 2-4 hours, checking frequently to prevent burning. The leaves should be brittle.
  5. Store: Let the rosemary cool completely, then remove the leaves from the stems and store them in an airtight container.

Window Sill Drying

For smaller quantities and a very hands-off approach, a sunny windowsill can work.

  1. Prepare Rosemary: Wash and thoroughly dry the rosemary sprigs.
  2. Arrange on Plate/Paper: Spread the rosemary sprigs evenly on a plate or piece of paper.
  3. Place in Sunny Window: Put the plate/paper in a sunny windowsill.
  4. Wait: Wait a week or more for them to dry.
  5. Store: Once dried, remove the leaves from the stems and store in an airtight container.

No matter which method you choose, properly dried rosemary should be brittle and easily crumbled. Store it in an airtight container in a cool, dark place to maintain its flavor and aroma.
