The Freezer Test Method

The freezer test involves chilling a small sample of the hot jelly mixture quickly to see if it sets. This simulates the final texture of the jelly once it cools completely.

Here's how to perform the test:

  1. Before you start boiling the jelly, place a few small dishes or spoons in the freezer.
  2. When your jelly mixture is nearing its expected setting point (often indicated by temperature or timing), carefully spoon a small dollop onto one of the chilled dishes.
  3. Return the dish with the jelly sample to the freezer for a short period, usually 1-2 minutes.
  4. When the time is up, pull the dish out of the freezer and gently nudge the dollop of jam with the tip of your finger.
  5. Evaluate the consistency:
    • It is done: If it has formed a skin on top that wrinkles a bit when pushed.
    • It is not done yet: If it is still quite liquid and your finger runs right through it.
