What is KFC dark meat?

Published in KFC Chicken 1 min read

KFC dark meat refers to the drumstick and thigh portions of a chicken.

The difference in color between dark and white meat arises from the distinct types of muscle fibers present in these cuts. Dark meat muscles, like those found in the drumstick and thigh, contain more myoglobin. Myoglobin is a protein that stores oxygen and is used for sustained activity. Since drumsticks and thighs are used more frequently by chickens for activities like walking and standing, they have a higher concentration of myoglobin, resulting in their darker color and richer flavor. This higher myoglobin content also contributes to the moistness of dark meat compared to white meat.
