To make Outlook links open in Microsoft Edge instead of Google Chrome, change your preferred browser setting within Outlook itself. Here's how:

Open Outlook.

Go to Account Information/Options: In the lower-left corner of the Outlook window, select "Options." (You might need to go to "File" then "Options" depending on your version of Outlook).

Navigate to Advanced Settings: In the "Outlook Options" window that pops up, choose the "Advanced" tab on the left-hand side.

Find Link Handling: Scroll down within the "Advanced" settings until you locate the "Link Handling" section.
